Yukiguni Maitake (TYO:1375) will launch its plant-based "Mushroom Meat" series in Japan on Feb. 18, using its premium maitake mushrooms to mimic a meat-like texture, according to a Wednesday filing on the Tokyo Stock Exchange.
The lineup includes ready-to-use mushroom meat, three sauce varieties-tomato, ajillo, and sesame dandan-and a rice mix. The company sees the product as a response to rising demand for meat alternatives amid global food concerns.
